Thanksgiving

Well, yesterday was a great day as I was able to eat three of my favorite foods:

  1. Real mashed potatoes
  2. Spiced yams
  3. Pumpkin pie

We also tried my brother’s ham recipe, which basically involves lots of sugar as a glaze.

The best part was having both sets of grandparents over for the big meal. The kids love playing with them and Cheryl and I get some adult conversation. It was a lazy day where I didn’t do much on my to-do list, but just enjoyed the time with my kids and family. Very restful.

Here is the yam recipe I use. The yams were my assignment this year.

Southern Style Favorite Yams

  1. 29 oz can of cut yams, drained and mashed
  2. 1/4 cup brown sugar
  3. 1/2 tsp salt
  4. 1 tsp cinnamon
  5. 1/2 tsp nutmeg
  6. 1 tbsp melted butter
  7. 1/4 cup cream
  8. 16 large marshmallows (abt 120g)

Preheat oven to 350ºF. Mix everything together except marshmallows. Mix in six marshmallows. Turn into greased baking dish. Put remaining marshmallows on top. Bake for 20 minutes or until marshmallows are golden brown.

I found it on the label of a can of Bruce’s Yams. Not being from the South, I have no idea if it is authentic. But it seems tasty enough.
